Easter Muffins - White Chocolate and Raspberry

 Long weekends are always delightful and there's nothing like some home-baked goodness to enjoy with family and friends.

We share one of our favourite quick and easy recipes, delicious eaten straight from the oven that the whole family will love!  

Easter Muffins

White Chocolate and Raspberry Muffins

Dry Ingredients:
310g Plain Flour
170g Sugar
1/2 Tsp Baking Powder
Pinch of Salt
50g Ground Almonds
Wet Ingredients:
120g  Milk 
100g Oil
1 Tsp Almond Essence
2 Eggs
200g Frozen Raspberries
150g White Chocolate Chopped
Handful of Flaked Almonds
Brown Sugar
Preheat oven to 200C. Mix dry ingredients in a bowl, add wet ingredients and stir well until combined. Spoon the mixture into lined muffin tins and top with a sprinkle of flaked almonds and brown sugar.
Enjoy with some freshly brewed cups of tea! x
